Sausage & Egg Casserole

8 oz. bulk pork sausage or Morningstar Farms veggie "sausage" patties
6 cups white bread cut in cubes (about 8 slices)
1 1/2 cups shredded cheddar
1 cup salsa
4 eggs
3/4 cups milk

1. Brown sausage (or bake the veggie patties).

2. Crumble sausage and arrange in a 2-qt shallow baking dish. Top with bread cubes and cheese.

3. Mix salsa, eggs and milk. Pour over bread and cheese, making sure all the bread is moistened.

4. Cover and refrigerate for a couple of hours or even overnight.

5. Bake uncovered at 350 Fahrenheit for 45 minutes or until knife inserted in the center comes out clean.

This was really good, thanks for posting the recipe! There is also a veggie sausage by Gimme Lean which tastes exactly like regular sausage - it's amazing, really. I tried the plain Gimme Lean once in place of ground beef and the results were depressingly awful. I think it really depends on the recipe and how strong the other flavors are and how much the meat itself is supposed to be THE flavor of the dish. Anyway, though, the "sausage" style of G.L. is good all by itself. MM!

You're welcome! This was probably my favorite of the new things I tried. Good tip on the Gimme Lean. I'll have to look for it. Can you buy it at Wild Oats?

I don't have a Wild Oats within walking distance so I'm not sure - I would bet that you can since even Fred Meyer carries it! It comes in a soft plastic tube. So appetizing sounding - ha ha.
